Recipe of the week: Olive Tapenade

INGREDIENTS

200g black olives (kalamata work well)

3 tbsp. capers

2 anchovies

1 large clove of garlic

2 tsp. fresh thyme

Juice from ½ a lemon

3 tbsp. extra virgin olive oil


INSTRUCTIONS

Remove pits from olives. Place the olives in a food processor along with capers, anchovies, garlic and thyme. Chop until they become a rough puree. Drizzle in the lemon juice and olive oil a little at a time, processing in-between each addition. Add a little cracked pepper to your desired taste.

This is great as a base on a little sour dough loaf or even spoon a little on top of your grilled chicken or fish. You only need a small amount to enjoy the flavours.

Olives have been found to have anti-inflammatory properties due to the phytonutrients found in them. They also contain high levels of antioxidants. Well worth adding a few to your diet.
