Ingredients
4 ripe roma tomatoes, chopped
1 diced avocado
½ cup diced sun-dried tomatoes
1 small red onion, chopped
3 tbsp. olive oil
¼ cup fresh coriander
½ cup fresh basil
¼ cup pitted black olives
¼ tsp ground Himalayan salt
Juice of 1 or 2 lemons
½ cup Goji berries
3 medjool dates, pitted
Instructions
Chop the avocado into small squares and set aside. Place all of the remaining ingredients into a food processor leaving aside a few tablespoons of the tomatoes and the coriander and basil, and pulse until well chopped. Then add the reserved tomatoes and the coriander and basil and chop some more. Leaving some out at the beginning just means you will have a chunkier salsa, which my family likes. Then add the avocado and gently mix through.
This salsa is delicious with corn chips, nut meat, or simply served alongside your green leafy salad. Use it in your burritos. The goji berries help boost your energy and antioxidant levels, and really add to the flavour.
