Recipe of the week: Beef CalderetaINGREDIENTS

1 kg sirloin steak (or cut of your choice)

3 tbsp. Bragg’s seasoning/ soy sauce

3 tbsp. vinegar

¼ tsp. Himalayan salt

¼ tsp. freshly cracked pepper

1 clove garlic (crushed)

2 medium onions (finely diced)

2 small chillies (if desired)

2 medium tomatoes (diced)

2 carrots (diced)

2 small potatoes (diced. you could also use a small sweet potato)

½ cup liverwurst (optional)

½ cup grated cheese

 

INSTRUCTIONS

Mix together the Bragg’s/soy, vinegar, salt and pepper in a dish. Add the diced meat and mix through, leaving to marinate a little while.

Gently sauté the onion and garlic in a little oil in a large non-stick pan, for about ten minutes without stirring. Add the de-seeded and sliced chillies towards the end, before adding the meat, along with 1 cup of water. Simmer for 1 hour, again without stirring.

Add the diced tomatoes, potatoes and carrots simmering until the potatoes are soft. An optional addition of the liverwurst makes this similar to the traditional Philippines dish. It is optional.

Once the potatoes are soft, sprinkle the grated cheese over the top and heat until melted.
