Ingredients:

½ red onion (finely diced)

1 medium cucumber (diced)

1 small red capsicum (diced)

1 large mango *

small pack of smoked salmon

Fresh juice from 1 lime

Method:

Place the very finely diced red onion into a medium sized mixing bowl, along with the diced cucumber and diced capsicum, mixing through well. Dice your mango and gently mix through until just combined. Gentle is the key here, otherwise your mango will just turn to mush.

Lastly, add a few torn strips of smoked salmon and mix through. A squeeze of fresh lime juice over the top and your salad is complete and ready to go.

 

* Choose a firm, but ripe, sweet smelling mango to avoid the mushiness J
