The Browns Plains studio community has a drop bin for our avocados seeds at the moment, so I thought I’d share this tasty dessert with all. John will magic our seeds into avocados in the coming years.

 Recipe of the week: Raw Cacao Mousse

(Serves 4-6 people)


6-8 medjool dates (pitted)

2 ripe avocados

⅔ cup coconut cream

2 tbsp. raw cacao powder

¼ tsp. vanilla extract concentrate

Pinch of himalayan salt



Place the pitted dates into your food processor and blender until they form a sort of paste and are well chopped.

Place the remaining ingredients in the order listed above into the processor and blend until smooth. Scrape down the sides and when you think it’s all blended, blend just a little bit longer. You really want no lumps of avocado visible.

Spoon out into individual bowls, or one larger bowl for serving. The little bowls are a nice touch and easier to share this way. Just figure out how many people you need to share with first. Cover and pop in the fridge to set overnight.

Garnish with a few fresh blueberries or strawberries just before serving.
